What does it mean that the protein is hydrolyzed? Peptide bonds are broken down by protease enzymes (enzymes breaking down proteines) into the amino acids with long chain – so called polypeptides. This is the process of enzymatic hydrolysis – pre-digestion. Its product is for the body perfectly utilizable protein in the form of peptides: oligopeptides (more than 12 amino acids), dipeptides (2 amino acids), tripeptides (3 amino acids), tetrapeptides (4 amino acids), pentapeptides (5 amino acids) and so on. Degree of hydrolysis – the most important indicator determining the quality of hydrolyzed proteins.Proteins can be hydrolyzed in different degreesi.e. they can have different degree of hydrolysis.We state (unlike other manufacturers) degree od hydrolysis not only on product´s labels but right in its name – DH12 that´s very high degree of hydrolysis and our product contains high amount of so called short peptides.Proteins with high DH are typical with very slightly bitter taste.
